Tasting Notes
Dark garnet with a fading purple hue. Classic Cabernet nose - cassis and blackcurrants with a light leafy ‘sauvage’ edge. Looking deeper, there’s cinnamon and allspice, poached blood plum, hints of vanilla bean and aniseed. These flavours carry over onto the open palate, the herbal notes adding a sense of freshness to the just ripe black fruit characteristics before the plummy and bramble fruit flood across the mid-palate. Tannins are soft, inviting and velvety with hints of gravel adding to the succulence, before finishing with a lip-smacking acidity that adds both length and persistence. Classic, stylish, cool climate claret.
Vineyard Notes
This Cabernet Sauvignon was sourced from the original Oakridge Vineyard in the cool red soils of Seville.
Winemaker's Notes
All grapes hand harvested and sorted prior to gently destemming to fermenter. After a four day cold maceration, fermentation commenced and peaked at 30°C. Pump-overs were conducted twice per day, and post ferment, the wine remained on skins for an additional 4 weeks prior to pressing. The wine then spent 15 months in French oak barrels maturing before blending and bottling.
Vintage Notes
A long, cool growing season with average cropping levels and ample rainfall has resulted in wines with outstanding varietal definition and purity.
